There is a special meaning to every type of traditional Chinese New Year cookie. Cashew nut cookies symbolize wealth because the shape and color of the nuts resemble ancient Chinese gold ingots.
Cashew nut cookies seem to be a relatively modern-ish evolution of the more traditional peanut cookies which represent long life and good health. There are many different versions of the cashew cookie. This rendition is a shortbread interpretation with just the right amount of crumble and crunch. Enjoy!
Cashew Cookies

- Set A
240g unsalted butter, softened
100g icing sugar
1 egg yolk (18g)
1/2 tsp vanilla extract, optional
- Set B – sift the following
350g all purpose flour
20g custard powder
100g ground toasted cashew nuts
- Topping
100g halved untoasted cashew nuts
1 egg
pinch of salt
Instructions
- Preheat oven to 150C. Line a baking tray with aluminum foil.
- Cream Set A until just combined
- Mix in Set B to form a pliable dough
- Place the dough between two sheets of plastic wrap. Roll to a thickness of 1/4 inch or just a little over 1/2 cm
- Cut into crescent shapes using a cookie cutter (or any shape of preference).
- Place onto baking tray.
- For the topping: beat the egg and add the salt
- Press cashew halves on the surface of the cookies and glaze with the beaten egg.
- Bake for 20 minutes or until the cookies are golden brown.
- Remove from the oven and cool completely before storing in an airtight container.
